In the old days, farming was not easy, and the town people had to look for industries besides agriculture to earn a living. Moreover, array performance was extremely popular in Nei-men during the old days, and the array leaders would always prepare large pots of snacks and meals for the members during their practice. As a result, simple rice dishes, soups, stir-fried noodles and rice noodles gradually evolved to sumptuous cuisine. The utensils have also evolved from preparing your own, moving your own tables and chairs, and serving your own dishes with the handling of everything under one single chef. Along with its development at weddings, funerals, and other celebrations, catering has slowly become a communal business in Nei-men Township.

      There are more than 150 chefs in Nei-men Township. With one dish per chef, so 10 dishes a table is nothing!
